Coconut Joyfuls


1 stick (1/2 cup) Butter
2 cups Powdered Sugar
3 cups (8 oz.) Coconut
2 squares (2-oz) Bittersweet Chocolate Melted

Melt butter in a saucepan. Remove from heat after butter melts. Add the powdered sugar and coconut and mix until well blended. Shape rounded teaspoons of mixture into balls. Make an indentation in the center of each coconut ball and place on cookie sheet lined with wax paper. Fill centers with melted chocolate. Chill 1-2 hours and store in refrigerator. Makes approximately 3 dozen.
